Hearty Minestrone Soup

Ever wondered what goes in Minestrone soup? Minestrone is an Italian vegetable soup made with healthy fresh vegetables and beans.

This soup was traditionally made to use up leftover vegetable and don't waste anything in the fridge, so feel free to use any seasonal vegetables you have on hand.

To precook borlotti beans follow these simple steps.

Ingredients:

  • Organic Pantry Extra Virgin Olive Oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery sticks, diced
  • 2 bay leaves
  • 400g mixed vegetables (cauliflower, pumpkin, greens, zucchini)
  • 1L vegetable stock
  • 3 roma tomatoes
  • salt & pepper to taste
  • 1 400g Organic Pantry borlotti beans, cooked & rinsed
  • Parmesan cheese to serve


Method:


Heat 1½ tbsp olive oil in a large saucepan, add onion, carrot, celery, and bay leaves and cook in a pot for 3 mins or until onion is soft.
Add the rest of the vegetables and 1L of stock, cover, bring to boil and cook for 25 mins at low heat.
Stir through cooked borlotti beans.
Serve with grated parmesan and crusty bread.
